🌶️ Spicy Sichuan Shredded Chicken (Serves 2–3)

Inspired by the bold flavours Andy grew up with, watching his mother work magic with fiery chillies and fragrant spices, our Jeung San Sichuan Chilli Oil is a taste of memory reborn. It balances heat, depth, and the signature numbing tingle of Sichuan peppercorns, wrapped in a vibrant red glow and rich aroma. Drizzle it over chicken, fried rice, noodles, or dim sum, and every dish transforms into an unforgettable experience - just like the meals from Andy’s family kitchen.
Ingredients
2 chicken thights (approx. 350g)
½ cucumber, thinly sliced
1 garlic clove, minced
2 slices of ginger
1 spring onion, finely sliced
A sprinkle of toasted sesame seeds
2–3 tbsp Jeung San Sichuan Chilli Oil
A pint of sesame seeds
A pinch of salt
Method
Place chicken thights in boiling water with ginger and a pinch of salt. Simmer for 12–15 minutes until cooked through. Remove, let cool, then shred into strips.
Slice thinly or lightly smash and cut into chunks. Arrange at the bottom of a serving dish.
Combine Jeung San Sichuan Chilli Oil, soy sauce, vinegar, sesame paste, sugar, and garlic in a small bowl. Adjust heat level to taste.
Place shredded chicken over cucumber, pour over the dressing, and toss gently.
Garnish with spring onion, sesame seeds, and an extra drizzle of chilli oil.
Light, spicy, and refreshing - perfect as a cold starter, with rice, or over noodles.
